AKA Blauraut (German Red Cabbage)

This recipe has been passed on to market manager Lauren, from her Mom. It is a great way to eat well for cheap. Cabbage is usually pretty cheap for how much you get (around or under $2/lb)..and obviously homegrown or bought from a local farmer is best!--But the threat of clubroot is so real. I like to double this recipe if I have a big enough cast iron pan or pot but keeping it as is, makes many helpings too! a great side dish or meal all on its own. Best enjoyed with family and friends on a chilly fall evening or at a special occasion like Thanksgiving or Christmas dinner. 

 

Ingredients

  • 1/4 head red cabbage (shredded)

  • 2 + 1/2 tbsp. vinegar (i like apple cider vinegar)

  • 1 apple, peeled and shredded

  • 1/4 tsp. all spice

  • 2 tbsp. flour

  • 1/2 -1 bouillon vegetable cube

  • 1/4-1/2 tsp. caraway seeds (these are crucial!)

  • 1 finely chopped onion

  • 2 cups water or 1 cup red wine and 1 cup water (red wine is best)

Instructions

Saute the onions in 2 tbsp. oil until clear. Add the shredded apple and sauté on low heat. Add the cabbage and sauté for about 4 min. then sprinkle with the flour and sauté a bit again. Then add the water, red wine, vinegar, bouillon cube, and spices and cook covered on low for 20 min.
